new saison from these guys, i think it just went on this week. cool beer. i usually put saison in one of four categories. its the dumbed down crappy american craft saison, the old world rustic farmy saison, the highly refined european saison, and the wild american brett type saison. this is squarely in that highly refined euro type, there is nothing raw or rugged about it. instead its got a radiant french type yeast, a very very clean wheat base, and a delicate mouthfeel, all carefully dialed in, rather than randomly occurring. i often dont love this type of saison, it seems too neat to be farmhouse ale in my head, but this one i like a lot. it has almost white wine notes from the yeast, more than just the typical french strain, and i like that a lot. its clean without a lot of funk or spice, but notes of lemongrass and even peach in there. its also nicely hopped, delicate, but grassy and limey, sort of a saaz profile on it, but who knows what they used. good to see trve making so many new beers lately, this has to be one of the more unique operations in denver, and its always a blast to visit. definitely give this saison a try, but expect it to be more of a belgian thing than a funky wild beer.
