i now know these guys are never going to make a bad beer, they just keep killing it. these large format bottles look awesome, and are fairly priced at the brewery, but i had it on tap instead. a hazy pale yellow color and a tall airy white belgian looking head, its pretty beer for sure. the aroma and flavor are mild, some bretty funk to this, but more farmy and rustic saison-esque than wild, without any more than just a little tart acidity to it, and a really clean finish. orange peel sort of bitterness, straw and grass, musty basement, but also a bright white wine note, and subtle green apple, its not fruity but its got a cool understated fruity yeastiness about it. it appears to be wheat based with little else going on in the mash, this is mild beer, session saison type, not as nuanced or complex as their more assertive wilds and sours, but a really cool and natural sort of old worldy nature to it. awesome carbonation and a dry feel on a roundish but delicate body, prickly going down, refreshing even for the style. i like the simplistic nature of this, its a nice contrast to some of the more esoteric beers these guys make. trve has easily become one of the best breweries in colorado. i may grab one of those big bottles of this before its gone and see how it cellars... it may get a little brettier, but its tasty now too!

edit: finally cracked the large bottle at a summer solstice gathering with some new friends, and it has matured some in the bottle since i had the draft above here, somewhat more refined and complex, but also not quite as dramatic as i was expecting it to be in terms of wildly funky, its still delicate, vinous, and clean, delicious and a crowd pleaser, but maybe one that would have benefited from a little more cellar time. such a cool beer, cool idea for a beer, and cool presentation, trve has my heart!
