saison done with honey and rose petals, really unique, light but interesting, drinkable and clever, always a joy to be at this place, to drink their beer, and to take in the vibe and the quality, they really remain unsung for how great they are, still so niche but the beer is epic. golden brassy toned brew with a high and lasting white head and a ton of rising bubbles, looks lively and excited, not quite perfectly clear. the aroma is floral first, the rose element has a rosewater sort of concentrated thing to it, easily identifiable, natural but robust, the honey adds to this floral vibe, but seems largely fermented out in terms of sweetness, and there are some earthy dry cereals in support on the grain side. the yeast isnt bretty or wild but does have a little funk and tang to it, not overly estery but it hints at lemon, white tea, green apple, sage, and white pepper. the flavor is right there with the nose, still rose petal forward but a little maltier too now, and this has some real layers to it. some coriander, rustic estery character, and spiciness from the yeast, a white wine note there too, and more of the honey in the middle although this never comes across as sweet to me at all. i could see this being amazing after some time in white wine or gin barrels or something, but it has a cool herbal and vibrant freshness now, which is only aided by all this carbonation, this is popping on the palate. dry for being honey based, kind of sexy with the rose, not overdone but definitely distinctive. cool recipe and execution here!
