Wheat saison aged in a French oak foedre for 8 months with our house mixed culture. Bottle conditioned in 750mL cork and caged bottles for 6 months. Soft acidity and oak, stone fruitiness, earthy funkiness, and a pleasant, slight hop bitterness. Packaged in both Green and Brown champagne bottles.

Poured from a 750mL green bottle into a monkish taster glass. Thank you Daniel for both the beer and glass!
First couple pours were undisturbed and crystal clear golden body with a nice frothy white head that reduces to leave lacing and retention, very nice looking beer. Last couple pours were hazy as the sediment unsettled.
On the nose, Belgian saison yeasty aromas dominate, spices, clove, oak, light hops, stone fruit.
On the tongue it’s lightly tart with notes of citrus, green apple, stone fruits, dry champagne, A solid oaky flavor, finishing lightly bitter with spices lingering. Crisp, refreshing body.
I really liked this beer! Underrated in my opinion, nicely balanced and good delicateness. Good flavors without adjuncts needed.

L - Light golden with some clarity and a huge white head that sticks around for a while and leaves behind some lacing.
S - Light fruits and spices along with some yeast.
T - Crisp light fruits - melon and apricot as well as some white wine flavors - some yeast and a good amount of spices in there.
F - Light to medium bodied with a high amount of carbonation. Crisp and refreshing.
O - A pretty good saison, but I've had 3 of Monkish's saisons now and honestly, they all kind of taste the same. This one is a little spicer than others. Not bad overall.
