Saison aged in gin ex-bourbon barrels (former bourbon barrels that then aged gin) for 6 months and then bottle conditioned for another 11 months in 750mL corked & caged champagne bottles. Lively, complex, earthy, fruity and floral, with a gentle acidity.

Slightly sweet and tart, gin oak barrel, and hint of farmhouse funky nose on this one! Taste follows with a tart and funky, hint of gin, yeasty-fruity swallow...the gin tart notes on the backend start to dominate as it warms. This is very gassy spritzey on the palate.
