As a brewery, we have a stated goal to constantly improve, and question our existing processes in an endeavor to make our beer better. One of the hallmark attributes of Tree House Brewing Company is continuous evolution, candid self assessment, and progressive hands on experimentation. We are focused on process now more than ever, and have used the recent curiosity beers to refine and question our process while investigating highly specific variables related to mash temperature, our water profile, yeast pitching rates, kettle & dry hopping rates, and pH adjustment methodology. Curiosity Sixty Three shares much in common with Curiosity Sixty Two, with the exception of the malt bill. On Curiosity Sixty Two, we utilized appreciable amounts of aromatic malt to give a rich, candied sweetness to the malt body. On Curiosity Sixty Three, we opted for a super simple malt bill of 2-row and dextrin malt. The kettle & dry hop charges remained the same, and a significant uptick in calcium sulfate was utilized. The result is a sharper but brighter tasting beer, with vibrant and clear notes of citrus, starfruit, and pineapple balanced by a light malt body and dry finish. If you like your hoppy beers with intensity and mouth coating flavors, Curiosity Sixty Three will undoubtedly satisfy that craving. Like all Curiosity beers, the lessons learned here will be subtly folded into our existing core beers, elevating our whole line-up. This will never not be fun!

I did not know this beer was from Treehouse. Super stoked to try this beer. The last beer I had from Treehouse was outstanding. The beer is 45 degrees and served in a tulip glass. The pour on the beer produced a bright white head with fair retention. The head is frothy and airy, leaving some lacing. The color of the beer is SRM 2 a pale straw with a hint of a light golden hue. The clarity of the beer is hazy, typical NEIPA. Overall a decent appearance, would have like to see more retention on the head.
The aromas in the beer are lemons, oranges, mandarins, a hint of grapefruit, a touch of herbal, floral, biscuit, a subtle sweetness, toasted malts, and a hint of grass.
The flavor of the beer is a biscuit, toasted malts, mandarins, lemons, oranges, a hint of grapefruit, malt sweetness, grass, floral esters, pineapple, mangos, herbal, pine, and bready.
The mouthfeel of the beer is fizzy, astringent, and coating.
The body of the beer is full, medium carbonation, a full finish.
This beer just does not measure up the last Treehouse beer I had. This had notes of pine and grapefruit, typical to WCIPA. It is a good beer just missing the mark from awesome.

Didn't love this curiosity. Looks good as typical TH would. Has a sweeter overall palate on it. Starts sweet and finishes sweet. No dryness to it. I could handle one but that is it. Didn't seem to have the typical TH yeast profile either.
I still give it a 4.1 so even though it's not TH standard it's still pretty good.

Pours a light foamy smaller head with moderate retention, good whispy lacing, cloudy hazy pale light orange colour
Nose big hop fruit, little citrus, stone fruit, nectarines, apricot, light doughy base malt, touch tropical like pineapple, touch of candied mango
Taste similar, some citrus and stone fruit, nectarines, apricot, candied dried mango and pineapple again, light doughy creamy dextrinous malt, lighter bitterness, increasing on the dry finish, light lemony late, sight mineral softness, hops getting slight spicy
Mouth is med bod but creamy soft doughy, medium creamy carbonation, no alcohol
Overall pretty nice, not in the elite tier like others that make, but still solid, great mouth, no alcohol, good hop fruits
