For this curious exploration into the art and science of hoppy beers, we utilized all Galaxy hops in a double IPA for the first time paired with our singular house yeast. It is buoyed by a simple grist of pale malt and an appreciable amount of oats! The result of utilizing a substantial amount of Galaxy in both the kettle and dry hop, Sixty Five pours a dense yellow color in the glass with a frothy, creamy head. We taste and smell super intense notes of under ripe pineapple, lychee, earthy citrus, key lime, and apricot. A truly unique expression of Galaxy and one that will reward the senses for many weeks to come. Six years of curiosity and we are more surprised and delighted than ever!

Like Galaxy? Then you'll love this beer. There was a ton to enjoy here with a lot of it centering around that hop and the copious amount of oats in the bod with the end result being a beer that was full, full-flavored and quite dank. As odd as that may sound, this was a winner that I enjoyed from start to finish!
The pour to this was a very muted goldenrod with plenty of head to top it off and a ton of lacing left behind although much of it was in the form of a thick ring near the top of my pint glass. Lots of scattered splotches were below that as those went most of the rest of the way down. Tons of Galaxy, dry lime, pine, and dank tropical fruit in the nose as the taste was full of those with a moderate hop burn accompanying those flavors in the taste. Pithy and full of papaya, this was a beast when it came to it's punch although it wasn't terribly strong in actuality as the light carbonation and recessed body allowed for the flavors to linger a bit longer than they should have...
I didn't warm up when drinking this as the amount of alcohol present was spot-on and enough to complement everything else that was going on here. White cheese and subtle, tangerine slickness gave color and depth to what could have been a one-dimensional beer featuring one hop. Canned on 5/09/19 with "IN THE BEGINNING THE UNIVERSE WAS CREATED" written above it, the end result of this beer was something fun and enjoyable that left me wanting to have more iterations of this series!

Thick, creamy, milky yellow, with a frothy, fluffy head. Really as hazy as it gets; it's completely opaque. Smells sweet, like a ripe orange and vanilla ice cream, but with some dank, grassy notes underneath. Tastes of grapefruit, stone fruit, lime, and ends on a big biting note of hoppy bitterness. Body is smooth, creamy, and pillowy (thank you oats!). A very tasty, very well-executed beer.
