Bifrost is a Norwegian-Style Farmhouse Ale that takes its name from the mythological rainbow road traveled by the gods. Adhering to tradition, we fermented this beer with kviek yeast, an aromatic strain whose lineage is an unadulterated representation of farmhouse brewing. Atop it’s rustic grain bill aromas of resinous pine, dried citrus peel, and red berries swirl from an addition of juniper berries and spruce tips in the boil. Finally, a small charge of Saphir hops adds subtle notes of dark currant and black tea. We find that traditional recipes such as this collapse the gulf of history and connect us through flavor to our past.

Tree House has been coming on strong with saisons this year (2025). First with Luthier, which tasted very much like Saison Dupont (almost a clone), and then their sour saison The Three Sisters, a very cool twist on the classic farmhouse ale. Now Bifrost, described on the can as a Norwegian-Style Famhouse Ale, brewed using kveik yeast. Let's see how this one is.
Pours a golden yellow in the glass, with a slight haze. An inch tall white head settles down into a thin film over the liquid and a solid ring on the glass. Some decent lacing left on the glass.
Aroma is less reminiscent of a classic saison but more of a light touch. Notes of citrus, predominantly lemon, some stone fruit, and some hay-like grassiness. Pleasant smelling.
Tastes like ripe peach, grassy hops, mild bitterness, finishes semi-dry. Delicious.
Light to medium mouthfeel. Very refreshing and not watery by any means. The flavor last a while on the palate. Light carbonation.
A very good farmhouse ale, a lighter, more refreshing drinking experience than your typical saison. This would be ideal as a summer drinker.

Aroma has notes of band-aids, cereal grains, lemon zest, and spruce tips.
Taste is...fine. A bit bland. Grainy, citrusy, some mild berry tartness. Yeast character hanging on for dear life.
Medium-light body with decent carbonation.
Overall this is a beer that exists. It's a farmhouse ale in name, but lacks any of the characteristics that would make it so. It's like if Saison Dupont tried to be a white ale? That's what I'm going with.
