I've been looking forward to trying this one for a while, since Bunker tends to be a little underrated and overlooked, and I have mostly had IPAs and hoppier stuff from them. Always good to see how a brewery like them handles a big ol' imperial stout without any adjuncts or flavorings added, too, since this type of thing can be somewhat difficult to balance well.

The pour is pretty standard really, at least at first; an oily and viscous stout pour with a quickly-forming collar of mocha-colored foam that builds up to a finger-and-a-half or so before sinking down to nearly nothing. No lace or legs here, and no surface coverage, so I do have to say I'm kinda disappointed. Some retention would have been good, at least. Let's hope it gets better as we move towards the aspects of a beer that truly matter.

The nose is promising, with a strong roasted malt element backed up by a hint of crisp leafiness/earthiness, some ground coffee beans, and sweet tobacco. Baker's chocolate and molasses follow up as it warms a bit, and even some dark fruit and leathery aspects make their presence known. Doesn't smell like a 9% stout, honestly, so that's an interesting note, especially if it continues to hide its ABV on the palate.

A lot of molasses and burnt sugar immediately on the palate, with a rush of roasted malt, chocolate liquor, and almost a hint of vanilla in there. Semi-prickling carbonation and a decently medium-heavy body for the style. Earthy and leathery notes from the nose do carry over a bit onto the tongue, with some char and more roast coming across toward the finish. A hint of snappy bitterness and licorice-like undertones close out each small sip. Alright, I think I enjoy this one quite a bit, although I still think it could stand to have had a much better pour so it sealed the deal a bit more obviously right out of the gate.

There are improvements that could be made here, but I also know that this is a beer that Bunker has aged in numerous types of barrels before, so my thought (or, rather, justification) is that they probably intentionally brew it a certain way so that it'll stand up to the barreling process, as that's probably how this beer is "supposed" to be enjoyed, but they can only put so much in barrels at a time, so releasing it on its own is only logical from a business standpoint. Worth a shot for sure, and now I want to grab a Calvados barrel-aged version of this if they ever put it out again.

Poured into a 16 oz tulip glass canned on 12/30/2020. Pours near pitch black with a 2 plus finger light brown head that leaves minimal lace with ok retention. 4

Aroma is deep dark chocolate, roasty coffee, char, vanilla, and back strap molasses. 4

Taste follows dark chocolate, coffee, vanilla, molasses, and a little char in the lingering finish. 4

Mouthfeel is about medium, a little under carbonated, not dry, and at 9% it drinks smaller. 3.75

Overall this is really pretty, minus the lack of retention and lace, nice flavor and aroma, but thin and under-carbonated. Still worth a try. 4
