Lightly funky pepto and barnyard aroma with a bit of lemony tartness.

Flavor is similar, with just enough sourness to counter the lightly sweet malt character. Finishes slightly dry.

Today's multi-microflora beers come with justifications like "wild" or "funky" or "brett-infused", or another moniker to tell customers that the beer isn't fermented with the expected lone brewers yeast, and that the flavors carry extra earthy, rusticity and authenticity. But West Sixth Brewery take us pack to the historic farmlands of Belgium with indigenous flavors with all its earth, funk and wily attitude.

Hazy straw and creamy in its head structure, the ale's supple carbonation mutes much of its earthen perfume. Dried lime, lemon and oranges all carry a leathery, musty character. Yet its drying taste is supple with wafer and light bread as its sweetness is slight.

The dry fruit stands tall as the sweetness dries nearly completely, leaving on the starchy texture behind to support the citrus and orchard fruit while also balancing the rising peppery spice. Peppercorn, balsa, cork and dry straw frame the final flavors as the finish draws near.

Dry in finish, the medium-bodied farmhouse ale retains a wheaten structure to give the texture a supportive weight and creaminess. But the low-lying carbonation only brings the beer's aroma, effervescence and peppery bite to moderate stature. A finish of burlap and dried citrus extend into a short and soft afterglow.
