I got this on tap at West Sixth. This is quite an interesting beer, tart and crisp but it lingers on the tongue. There is a citrus taste to this one, very sour on the nose, grapefruit and wheat. The nose is warm and sweet. Great beer, not something I would session.

Born on the Belgian farmhouse but fully explored by the American craft brewer, this darling style takes on the rusticity that the funk and fauna of the farmlands along with a clean and fruity affair.

West Sixth's latest rendition pours a hazy straw with a fine champagne bubbly. Its cottony white head comes to life with an earthen perfume of hay, citrus, wine must, cork and weathered oak. Its taste is modestly sweetened with light biscuit, honey and powdered sugar.

As the flavors evolve across the middle palate, its fruitiness reveals a cidery taste of apple, a vinous taste of white grape and a hint of grapefruit, honeydew, kiwi and gooseberry as the taste tightens and a mild tartness builds. Its finish is moderately bitter with citrus peel, straw, grass and peppercorn with an undertow of burlap and pineapple.

Medium-light in its body, the beer's wheaten sweetness dissolves and the pepper and white wine character wins out in the beer's mouthfeel. Its spicy finish commands the balance while the powder-fine texture of wild yeast brings a balsa and cork-like aftertaste through its drying effervescence.
