Poured into a Fremont small snifter. Pours a medium to dark orange-red, with a fine, thin dark khaki head that dissipates to tiny patches. Aroma of Belgian yeast, fresh and dried plums, dates, dry caramel and red berries and light oak. Flavor follows, with caramel malt, Selkirk's fruity Belgian yeast, fresh and dried plums, dates, raisins, hints of cranberries and apricots, mild oak. Medium bodied with light creaminess and good carbonation. A rich, semi-sweet dark Belgian with nice oak from the barrel and classic dark dried fruit as well as fresh fruit notes from the yeast. There is a little sweetness and estery fruit flavor that counteracts the dark fruit, but much is due to the house yeast, which is very fresh fruit forward. Alcohol well covered. The pour seemed lightly carbonated, but the there is plenty on the tongue. A fine Belgian style strong dark ale. I cellared this one over a year and it tastes quite similar to the original Cuvee. This brewery is now scarce in Seattle, and I'd like to see them back. I really like their yeast.

Bottle from HomeBrewStuff. 2nd batch (?), as it is labelled Cuvee II. Dark brown, small ring of head.Sweet aroma, pit fruit, prunes, minor alcohol factor. Taste is also sweet, but this time with the barrel notes earthy, woody, kind of chalky. Latent heat, nice and tasty, but take your time. It’s worth it.
