Our single hop series has been a delicious and interesting experiment into the diverse world of hops. Following an identical recipe but only changing one variable each time (the hop) we've been able to study the exact aromatics and flavours imparted by specific varieties. Yes, when ordering this beer in the brewpub the jokes are endless (ie. “I'm not so sure about monogamy” or “I tried monogamy once and never really liked it” or the oft hilarious “I guess I'll have it because my girlfriend/boyfriend is sitting beside me”) but stop being a wise-ass. Even the polygamous can't deny the allure of this beer.
MOSAIC: The Monogamy to trump all other Monogamies. Mosaic moved on the Bellwoods scene in early January 2014, winning us over with its great bittering capabilities, floral and earthy notes, and unique dank blueberry aromas.

473 ml can served cold into a chalice. Purchase from the Brewery and Canned January 11, 2023.
Appearance - Very hazy and turbid yellowy white/gold brew. A finger plus of loose but rocky white head rests on top. Above average retention.
Smell - Dank and resinous with plenty of citrus. Weedy and with pineapple and grapefruit notes with a touch of passionfruit and stone fruits.
Taste - Semi bitter with some grassy and weedy aspects, accompanied by some sweeter citrus elements. Nectarine and peach are prominent with some orange pith and a touch of lemon zest.
Mouthfeel - Medium-full bodied, juicy but with a semi dry finish. Carbonation is middling appropriate for the style.
Overall - Very solid IPA, one of the better ones from the Monagamy series at least amongst the ones I've been able to sample.

Hazy yellow topped with three fingers of off-white head. Moderate carbonation. Smells very dank and citrusy, resinous and sticky. That is my anticipation. Upon drinking at my anticipations are satisfied! Because the taste follows the nose well. Medium body with moderate to low carbonation. I got this in Kitchener no December 1, 2022. I am enjoying it out here in New Hamburg the same day.

Misty straw with thick stable creamy head. Aroma dominated by hopping with gentle sweet malts a little recessed. Flavour: Big mouthful of mosaic hops balanced by malt sweetness: honey, apricot, clover, straw.

Slightly hazy yellow color with white head. Aroma is dank, citrusy and fruity. Taste follows with dank hops and juicy citrus fruits. Really easy to drink, light bodied and crisp.

Pours a golden orange colour, just over a finger of white head and some lace. Smell is mostly tropical fruit, hoppy throughout and just a suggestion of malt like the rest of the series. Taste follows the nose with tropical fruit, some pineapple and fleshy mango, big hop flavour and lighter on the bitterness than the majority of the Monogamy series, dry in the finish with a lingering fruit aftertaste. Lightly carbonated, medium body. Good and pretty enjoyable, somewhere in the upper-middle pack of Monogamy beers.
