The hop harvest in the northern hemisphere comes just once a year, in early fall (and this year, a few weeks earlier than that!). It's in this small window of time that we're able to utilize fresh hop flowers and create 'fresh hop' or 'wet hop' beers.
This particular version (with a 4 hour bine to fermentor turnaround) utilizes fresh Cascade hops from Bighead farm in Meaford, ON, and showcases the sorts of juicy, bright notes we can only achieve when using flowers as opposed to pellets.

A wet-hopped harvest beer with Cascade. The use of fresh hops results in a much different flavour than dried, much more apparent to me than the Centennial version done last year. Huge honeydew melon flavour, with citrus and some grassy flavours. A bit spicy. Tingly with a slight sticky feel. Very refreshing with a very different flavour profile than usual.
