Collaboration with Brasserie de la Senne
Brewed in collaboration with our friends at De La Senne, Come What May is a crisp, hoppy beer with a stunning, nuanced complexity of flavours. We set out to create a saison-like ale, but without the saison yeast, and achieved this through several fermentations (primary with neutral ale yeast, secondary in oak), selective brett inoculation, the use of rustic grains like spelt and rye, and ample time to become its best self. The final beer is refreshing, refined, and perfectly balanced -- a complex beer that's easy to drink.

Bottle: Poured a golden color ale with a large white foamy head with excellent retention and some good amount of lacing. Aroma of dry floral hoppy undertones with some dry Brett notes and funky ester. Taste is also a super nice mix of floral hoppy undertones with some dry Brett notes with a sharp dry finish. Body is quite full with excellent carbonation. Solid saison with nice usage of Brett yeast strain.

Lemon gold body, slight haze, topped by a frothy white head that has a couple minutes retention.
Aroma is a bit like walking through an apple orchard, both in terms of the fruit and the fields. Smells like fall. Has that sense of sweet and tart that an apple and pear do.
Flavour continues where the aroma was leading, tasting of a true cider, having a bit of funk, clean crisp feel, and a dry finish. Carbonation is on the lighter side, without being flat. Makes my mind go to Spanish sidra. Apple, pear, lemon, and light malt, finished with a mild hop bitterness.
A well crafted brew, with distinct flavour profile that lingers on the palate. Could pair well with a variety of foods - burgers, chicken, pork. Definitely a hit.
