The third chapter in our 100 series focuses the spotlight on Maris Otter, a premium two-row malt known for imparting a rustic biscuit character that works well to balance inherent sweetness in pale ales. We then dry-hopped this beer exclusively (and excessively) with Simcoe hops.
What it smells like, what it tastes like: Abundant aromas and flavours of ripe papaya, mango and orange peel are balanced by subtle cereal grain notes, soft carbonation, a light body and dry finish.

On tap at Bellwoods Brewery in Toronto, ON.
This one pours a hazy bright yellow color, with a small head and a little bit of lacing.
This smells like sweet biscuits- the Maris Otter comes through nicely in the aroma. There's also some super juicy mango and dry orange peel.
This has a really dry taste, in a good way- with that lightly sweet mostly biscuity malt character, cereal grains, OJ, mango, and grapefruit peel.
This is crisp and dry, and super drinkable, with a snappy level of carbonation.
This is a really clean and elegant expression of both the featured malt and hop here- this is clear brewing expertise.
