Barrel-aged dark sour with haskap berries
One of the first aged sours to leave oak at Bellwoods, Donkey Venom is a complex beer that we've brewed and blended many times over the years -- constantly subject to our relentless process of refinement. At its roots its a rich porter, but the time it spends in barrels with brett and bacteria harmonizes the ingredients, yielding bright levels of acidity, complimentary fruit flavours, and and ultra fine carbonation well suited to the style. A hybrid of sorts, that effortlessly overlaps the categories of 'dark beer' and 'sour'.
This variant of Donkey Venom was conditioned on 1000 pounds of whole Haskap berries.
The addition of haskap berries introduces flavours and aromas of sweet dark cherry, plum and black currant cordial to an already voluptuous base beer. This combination of flavours enhances the impression of dark chocolate and toasted wood, while further drying the body and suggesting raspberry seeds and merlot grapes.

Complex, but a bit confounding. Once I got past the peculiar nose, it was possible to pick up the funky fruity magic. It’s a bizarre but oddly satisfying combination that is hard to describe.

Deep, dark purple, like blackberry jam, a beautiful and unique pour. The head is a pinkish brown, and fizzles aggressively, lasting maybe a minute, leaving a rim, poor retention.
Aroma is of dark berries - cassis, blackberry - some sourness. It's got me interested, thinking of pie.
Flavour is following suit, with those same dark berries present in juice form, acidic and tart, complimenting the sourness coming from the yeast, minimal sweetness. It's more like of the black currant flavour, which I guess is what haskap berries are like, it doesn't have some the sweetness of blackberries. Low and fine carbonation, like a Perrier, medium body. Feel is easy drinking and sizzling on the palate, with great length.
Love the flavour and aroma of this one, the fruit is a break from the norm and a delight. Could make for a nice dessert beer (chocolate cake), or have it with wild game - venison, boar.
