BuWoo is a collaborative mixed-fermentation sour barrel project between Bellwoods and Burdock, released simultaneously in our respective shops.
Our version began as a blend of golden ales pulled from our foeders, that was then conditioned on a whack of Alphonso mangoes, and cold-steeped Japanese Sencha. Our process was marked by hilarious levels of headaches, owing largely to the filtering stage (ever flossed after eating a mango? Yeah), but it wouldn't be a worthy collab if we hadn't shooketh our fists at the sky a few times. The resulting beer showcases bold acidity, aromatics of mango sorbet, and a distinct green tea quality, emboldened by a substantial slumber in oak.

Bottle: Poured a bright golden color ale with a white foamy head with OK retention and minimal lacing. Aroma of sour notes with some light fruity undertones with light funky notes also perceptible. Taste is a mix of sour notes with limited amount of acidity and some light fruit notes with light funky ester. Body is pretty full for style with good level of carbonation. Enjoyable and refreshing but tea notes are quite difficult to perceive.

Body is colour of lemon juice, unfiltered, topped with a soapy white head, full of big bubbles that pop out of existence in half a minute leaving a faint rim.
Tropical fruit aroma, lighter than expected - mango, pineapple, orange - with noticeable acidity.
Packs a sour punch, of citrus and exotic fruits. I could've mistaken it for yuzu. Orange, tangerine, mango, pineapple. Accompanied by a fine, sharp effervescence engaging the palate, and bright acidity. A pleasing burn lingers in the finish.
