I have consumed quite a few beers from this brewery, and thus far, I have been impressed. Thank you, Peter, for these fantastic beers. I am using a tulip glass and serving at 44 degrees. An airy and foamy one-fingered head was created from the pour. The quick dissipation left no lacing on the glass. The color is close to cherry red. The clarity is opaque and has lots of carbonation bubbles. The appearance is average for this style.
The nose is earthy, with cherries, grapes, berries, horse blanket, dank barn, straw, sweet fruity sugars, and slightly floral. The aromas have this acidic vinegar quality without the overbearing smell. I find the nose of this beer lovely.
This is impressive; this wild ale is alive with flavors. I taste cherries, berries, grapes, musty barn, oak, sap, earthiness, mild sherry vinegar, floral, a touch of horse blanket, a Belgium yeast, light fruity sweetness, and light toasty malts.
The mouthfeel is puckering yet finishes crisp and dry. The body is light with high carbonation.
Fantastic wild Ale. I love how the beer feels seamless with balance. The flavors shine and nothing is out of focus. I love this beer.

Glimmering ruby body with the same clarity; rapidly forms a pink sea salt head, fizzy and frothy, with good retention.
Aromas of tart red fruit - raspberry, cherry - along with hints of sweet spice, cinnamon, and floral honey.
The expected tart fruit flavours are there, matching the aroma, but what really catches attention is the musty, spicey, almost smoky yeast notes (not 'funky' or umami), really interesting and unique; bright flavour and feel, just tart and acidic enough to excite the taste-buds; fine, prickly effervescence, even finer than champagne, mouth filling; high carbonation and medium body; lingering flavour and pucker.
Fantastic feel, with curious and unique flavours owing to the wild fermentation.
