An IPA is a series that acts as a creative outlet for all things DIPA from Oss. A DIPA takes it up a notch.
In this batch we explore a slightly less dry, rounder hoppy beer. We chose a new (to us) yeast that's less attenuative, modified our grain and water bills, and dosed it with the same massive dry hop that all our DIPAs receive. The resulting beer finishes a little higher, with super aromatics and a soft mouthfeel - in short, it smells and tastes very yummy.
This batch of A DIPA is hopped with Vic Secret, Citra & Mosaic. Tastes like banana popsicle, pineapple, cherry.

Pours a hazy yellow with small head retention that turns mostly to a ring. Hops on the nose with wooden tones and honey. Creamy smooth, with the wood coming through strong. Not as much citrus as expected and more bitterness. Though to be fair, this is almost three months old. As is, it's slightly below the mark.

Can: Poured a bright yellow color ale with a large pure white foamy head with good retention and some lacing. Aroma of fresh citrusy hops notes with nice floral hops undertones with some juicy notes. Taste is also agreta mix of citrusy notes with light tropical notes, some residual sugar with some juicy hops floral undertones. Body is pretty full with good carbonation. Solid double IPA with great hops profile and good drinkability.
