After spending 13 months in bourbon barrels, this Imperial Stout was aged an additional 5 months in maple brûlée bourbon barrels from Tonnellerie Moreau in Quebec. They fill bourbon barrels with maple syrup, empty them, and then torch the insides, creating a toasted caramelized sugar effect.
This rich and delicious sensory experience pours quite thick and drinks scary-smooth. Notes of anise and caramelized sugar are at the forefront, alongside maple and oak character, hints of red liquorice and a long, boozy bourbon-laced finish.

very sweet, some interesting caramelized sugar. It all becomes..sugar. A large bottle was too much, maybe for some cooking.Boozy aroma. Try everything for pastry style.

Bottle: Poured a pitch-black color stout with a dark brown foamy head with some retention and some light lacing notes. Aroma of black chocolate notes with some rich bourbon and vanilla notes with subtle maple notes. Taste is also a mix of black chocolate notes with some bourbon notes and hints of maple syrup and vanilla. Body is pretty full with a syrupy texture and good carbonation with some alcohol notes that are discernible. Solid BA stout with strong flavors and loads of complexity.
