500 ml bottle from the brewery and served cool into a chalice. Bottled Aug 5, 2025. Cost was not insignificant.
Appearance - Thick virtually black beer that appears viscous and dense. Capped with a finger of deep brown head and moderate retention time. Ominous.
Smell - Massive chocolate aroma, plenty of bourbon and the raspberry shines through nicely. Layered and complex. Vanilla accompanies all of the disparate aromas for a cohesive and wonderful smelling brew.
Taste - Initially chocolate and bourbon, then a quick splash of fresh raspberries, going sweet with vanilla, a cream chocolate quality then back to some light sweetness and a pinch more bourbon. Coconut a bit in the aftertaste with some chocolate, giving Almond joy vibes. Wonderfully complex with several stages of tasting flavors.
Mouthfeel - Low carbonation, thick and very full bodied. Very creamy and decadent. A true dessert beer. ABV does warm the back of the throat rapidly as expected.
Overall - Pretty spectacular dessert brew with a wide range of flavors, balanced yet all get a moment or two to shine. Midnight Hunter makes the short list for best new beer I've tried in 2025, and by the time all is said and done, it may even take the crown. Awesome stuff from Bellwoods and the imperial stouts as one comes to expect.
