This malty brown ale came about as a response to our hoppier offerings. Though we love hops and will continue to brew countless styles devoted to the bitter plant, we also wanted to make a beer that embodies all the best flavours present in our varied malts. The Bootknife is all about caramelized malty flavours that delight the palate. Dark, full-flavoured, but nowhere near a stout. This is a style that justly earned its spot on our diverse line up.

On tap at Bellwoods.
Beer is dark brown. A moderately sized beige/tan head on top. OK retention, decent lacing.
Smell consists of yeast, chocolate and bread.
Taste is good. Dry for a Belgian dark ale. Chocolate, dark fruit (raisin), yeast. Bready, some caramel there. Earthy hops. Dry finish.
Medium bodied, moderate carbonation, a little on the high end. Chewy.
Overall, quite good. I prefer this one to the Toil & Trouble they did, which would be the closest comparator in their lineup.

On tap at the brewpub. Above average mouthfeel. Deep chocolate brown,a small mocha coloured head. chocolate malt. The style, some yeast without being overally yeasty. Nicely malted without being too sweet. Very good drinkability. Worth seeking out for Belgian fans.
