Our single hop series has been a delicious and interesting experiment into the diverse world of hops. Following an identical recipe but only changing one variable each time (the hop) we've been able to study the exact aromatics and flavours imparted by specific varieties. Not unlike the series launched by Mikkeller, here at Bellwoods our Monagamy brews are all about settling down with one love. Yes, when ordering this beer in the brewpub the jokes are endless (ie. “I'm not so sure about monogamy” or “I tried monogamy once and never really liked it” or the oft hilarious “I guess I'll have it because my girlfriend/boyfriend is sitting beside me”) but stop being a wise-ass. Even the polygamous can't deny the allure of this beer.

Really hazy yellow color with off-white head. Aroma has nice floral, grassy and slightly dank notes. Taste has bitter grapefruit rind and dry grassy bitterness. Medium body and carbonation, crisp and easy drinking.

S-Opaque yellow, looks creamy and velvety, white head lingers a while
A-Heavy on the citrus, lemon and orange and tangerine
M-Higher end carbonation with a medium range mouthfeel. Low but present resinous character
T-Hint of sweet upfront with an orange rind bitterness that comes through and stays to coat the palate
O-This is a pretty nice pale ale, the Chinook character comes out to play in the form of a puckering orange, rind and all.

This one pours a hazy light orange, with a small head and lots of lacing.
This smells really spicy, herbal, and piney- with some melon and grapefruit.
This is one just loaded with Chinook hops- it's so spicy. There's pine needles, cedar, and heavy duty resin, with a bit of grapefruit rind and melon.
This is crisp, with a lingering and biting bitterness on the finish. The bitterness is very high, and dries the mouth right out.
Chinook is not the best hop to stand alone, because of how bitter it is. Luckily, I do love heavy bitterness in IPAs, so this is a fun beer.

Chinook is not the best hop to stand alone, because of how bitter it is. Luckily, I do love heavy bitterness in IPAs, so this is a fun beer.

Alright, this was interesting because I was reminded of two things while having this...
Into a bellwoods tulip glass, finger of head, golden and slightly hazy.
Aroma: citrus rind, pine and metallic dankiness, overall and oddly this reminded me of mustard oil which is something my mother keeps in the house as a household remedy for skin care (it's a thing among Pakistanis).
Taste: malt up front but this was dominated by danky and nutty bitterness with a hint of spice (mustard) this reminded me of my childhood, cracking apricot stones to find apricot kernels, most would taste like a sweeter version of an almond but you risk bitting into a bitter kernel which is what this beer reminds me of - not very pleasant (after a bit of research, apparently I also risked cyanide poisoning).
Overall: if you are curious about Chinook hops pick this up, afterall this IS an experiment, I walk away with knowing what to expect from Chinook hops but won't be reaching for a Chinook heavy beer anytime soon. I had this next to the Citra version which is much more pleasant.
