Deep gold appearance, almost copper-colored. The beer is very clear with light bubbly carbonation throughout. Pours leaving a decent half-inch head of off-white foam that holds nicely for a couple minutes. The aroma carries a soft mixture of floral, citrus tinged hops and lightly sweetened cereal grains. It's mostly clean and mild, but with a touch of grassy earth to give it some depth.
I'm very impressed with the balance of toasted bread malt character and the light orange/grapefruit citric twang from the experimental hop. The finish has a fantastic, lightly drying, lingering bitterness, and in general the flavors play on their subtleties to keep interesting without being brash. Medium body with moderate carbonation, finishes clean.
Every sip of this beer leaves me wanting more, so I'd say it's a winner. It's definitely the best of the single-hop Unihopper pale series thus far, and it would be unfortunate if they don't make this exact recipe again. In my mind this could be a flagship beer for a brewery. What's all the fuss about IPA's? If Pale Ales can be this good then I'm all set.
