a unique wood aged brett saison, a series they do a lot of hops and fruit with it looks like, i was lucky enough to have this edition on tap at the brewery when we visited. its an interesting base, the fermentation profile is real unique here, funky musty brett, not overly mature to me, but obvious in the mix, some vinous saison yeast character too, light spiciness, very dry, very interesting and interwoven and complex. some uniform haziness to it, a shade deeper and richer looking than expected, some more robust wheat malt maybe in the mash, a short white head dissipates pretty fast. aroma and flavor are tart without being sour, very funky despite having an obvious freshness component from the hops, and very juicy with the dry hopping, here lime leaf, lemongrass, and canned pineapple character from the galaxy hops, a nice choice for this. just a bit of wine character through it from the oak, a density that i like, especially combined with the high carbonation, way more lively than it looks in the glass. i think this would age pretty well in the bottle, the brett seems to not quite be in full bloom yet, and some time might let it run, but its delicious now too, and the hops pop from start to finish. a fun recipe, i think i liked this one just a tad better than the pinor noir edition, but they have a cool project going here with this series for sure!
