darn good, this is one of the best beers ive had from these guys, seemingly a quality, if slightly malty kolsch at the core of this, but the honey makes it pop, distinctive without being sugary ever, even in the center, and this ends up being well refined, super drinkable, and something quite impressive on the whole. brass colored beer with pretty good clarity and a lasting inch of creamy white head from the tap, lots of bubbles rising and popping, and a certain shine to it. the aroma is floral honey all the way, no subtle at all, but i still get some german character from both the grain and the yeast, an apparent lager-like crispness, and a little citrus in the mix, summery and pleasant, some minerals too. the flavor is honey driven but the malt also feels a little fuller to me than is common for a kolsch, more golden than yellow not just in color but in flavor and feel, slight toast, in nice support of the honey, which hits like a wildflower type, fermented dry but with enough residual character to really define this, the essence of the honey peaks right in the middle, but it stays through the finish despite the dryness, love that. fresh and biscuity, only lightly hopped, and real nicely fermented. good carbonation makes it sing, and this is a great food beer, a total ripper, and one i will look forward to drinking again. my favorite of all we had on our recent visit to the ketchum taproom, a great place to hang this time of year!
