Aged for 18 months in Port wine barrels, Beast Infection is a barrel sour fermented version of our Tribute Tripel that showcases layers and complexity imparted by the beer, the barrels, and the ‘bugs’ that created it. The depth of grappa-like qualities from the Port, citrus and fruit qualities from Tribute, vanilla and earthy oak from the barrels, is rounded by a complementary tart sourness imparted by the use of two bacteria and and one wild yeast strain from one of our favorite yeast houses. Beast Infection is a sum of all it’s parts, and more.

On-tap on NCBC's 2nd Anniversary.
Poured into a clear plastic cup.

Appearance
Muddy amber with a short head that dissipates quickly. Good clarity with lively carbonation.

Nose
Brett funk, Lacto, lemon, cherry, and oak.

Taste
Big amount of Brett funkiness along with some Lacto sourness. Black current, black cherry, and lemon. Notes of tannic port wine and a good amount of oak on the finish.

Mouthfeel
Medium bodied, off-dry, and well carbonated.

Overall
A nice start for Neshaminy Creek sours. I would definitely like to see more in the future.
