Brewed with a mix of grains and an authentic Saison yeast strain, this beer is a blend of Saison aged in wine barrels with Pediococcus and Lactobacillus for 8 to 12 months. It was then bottle conditioned to create the dry, tart and complex character you are hopefully now enjoying.

Medium: Capped + tulip glass. (aged 6 months)
Opacity: Bright with low activity, a little hazy with yeast.
Color: Shiny straw.
Head: Slightly foamy 2 finger.
Legs: Good with moderate swirl reaction.
Smell: Wild yeast/Tart/Lactose.
Taste: Jolly ranchers/Passion fruit/Lemon/Wood.
Feel: Funky/Sour candy/Barrel aged/Citrusy.
Body: Medium to high roundness, slightly oily yet smooth.
Carbonation: Light sharpness, a bit shy.
Overall: Saison? Maybe a hint but definitely more Wild Ale. A bit overly acidic, the rest is excellent quality stuff though, quite hearty for the abv.

From a 500ml bottle, dated 03/22/19. Served in an imperial pint pub glass.
Pours a glowing sunshiny gold with a finger of soft white suds. Not much in the way of retention, just a fizzy little cap and a smatter of lacing.
The nose is sharp and tart, brett funk, grass, apple peel and a coppery tang.
Taste is reminiscent of apple cider vinegar, sour cream and gummy bears which, granted, sounds weirdly disgusting but, in this context, is actually rather tasty. Honest.
Feel is creamy-slick and medium bodied with ample fine, prickly carbonation.
Overall, a tasty bottle of funky tartness. Certainly not what I think of when I think of saison - if I’d had the label turned away from me, I would have pegged it as an oud bruin. Definitely hit the spot.

Bottle: Poured a lightly hazy orangey color ale with a large foamy head with limited retention and some minor lacing. Aroma of acidic notes with light oak notes and funky ester is enticing. Taste is mostly dominated by acidic notes with some oak presence, light apricot notes with some subtle funky notes. Body is about average with good carbonation. I find this one too be too much acidic which hides some of the complex flavours.

It pours pretty clear and golden with a short-lived little white head. The aroma and flavor are both tart first and foremost with some supporting earthiness and barrel funk. It is very drinkable with barely-there alcohol and a dry finish. I'm not the biggest sour guy, but I do love funky saisons and I feel like this one strikes a good balance between all its components. It tastes similar to Sophie with some added sourness. Here's to 900 more! (4.25)
