22oz bottle, no date. Served in a Duvel Tulip.
Appearance: Dark brown - cola to mahogany. Appears clear, but dark enough not a lot of light comes through. Light tan thick ring of foam at the edge, with some occasional thick strands of persistent lacing noted.
Smell: Mostly bourbon whiskey, but there are some underlying aspects of the fruitiness and malt character of a doppelbock. They're present, just muted. Some metallic and vanilla notes as well.
Taste: Sweet like a doppelbock should be, but with a 50/50 blend of bourbon whiskey flavoring. The two are there and they're both confusing the other taste, but they sort of work together as well. Definite vanilla notes along with the bourbon whiskey. Some lingering bourbon "bite" in the finish that lingers a bit. Noble hops are completely hidden by the bourbon barrel aging.
Mouthfeel: Very light carbonation. A bit warming from the higher ABV and bourbon notes. Sticky on the teeth. Good thickness though - smooth and maybe even a little chewy.
Overall / Drinkability: A good slow sipping bourbon barrel aged beer. I think the only other bourbon barrel doppelbock I've ever had was from He'Brew - their Bock Bock, but that one was really strong in all aspects and the doppelbock was mostly hidden under all that whiskey flavor. This one is different - the bourbon barrel aging compliments the sweetness of the doppelbock and shares parts of the flavor with the dopplebock while hiding others under the whiskey notes. I think this beer would be paired best with a dessert. It could go with a main dish, but I think this beer is really for after dinner. Not really a "Beast" after all. Oh sure, the higher ABV is to watch out for if you're going to finish an entire bottle by yourself (which I did) but it's not a massive whiskey bomb like some bourbon barrel aged beers turn into.

From the 22 oz bottle in a snifter via The Growler Stop in Newtown. This decent little
doppelbock pours a nice dark red tinged brown color with a modest head of white foam
that settles to a thin ring scant lacing. Nose offers notes of heavy boozy bourbon and oak
with touches of vanilla and sweet brown sugars. Flavors exceed the nose with brown sugars
drenched in warming bourbon and vanilla with oak on the rear with a touch of smoke on the
rear of the taste. Nice mouth feel; medium full body is lightly slick, boozy, warming, low carbonation,
and a sweet finish.
Overall, a nice offering from a newer brewer. Could use a touch of refinement and a touch more
depth, but still a nice doppel for the bourbon lovers out there.
