Och! After two years in a young, wet WhistlePig Rye barrel this expression of Gravedigger Billy Imperial Scotch Ale boasts a striking American oak and whiskey profile punctuating an off-sweet caramel, cherry, and date malt structure two years in the making. Like a wooden kilt for your mouth.

Pours a rather drab brown with a weak cream colored head. Aroma has notes of oak, rye whiskey, malt, and some light spice. Taste is where this one starts to get interesting. There is a lot of rye whiskey and peat coming through up front with rich woody oak, and lots of barrel. You can “taste the splinters” kind of barrel on this one. Together they have this lovely earthy presentation. Underlying that are notes of malt, cinnamon, nutmeg and all spice. On the finish there is a moderate bitterness that adds to that peaty, earthy presentation. It’s delicious. Feel is prickly, lively for a 15%+ beer. Smooth and easy drinking for a big boy. Overall I can see why this is polarizing - but it works for me.

I had this on draft 4/15/23 @ Revolution's Taproom.
Opaque brown appearance.
Small tan head; a thick curtain of lace remained.
Mild notes of peat, booze heat & caramel in the nose...not much there, overall.
Thick, sticky mouthfeel.
Booze heat, mild smoke & mild caramel flavors. Boozy & kind of boring; not one of the best Deep Wood variants, that's for sure.
