This was brewed in collaboration with Is/Was. We brewed two different batches: one at their place, and one at our Brewpub. We essentially made the same wort built from both malted spelt and sunflower seeds. The big difference is the yeasts we each used to ferment with. Is/Was stuck with their house yeast which originates from Belgium, while our half was fermented with a mixed culture; and we also added chamomile flowers.
After the primary fermentation was nearly done, we each then added each other's cultures to each others' batch of beer, and left them to finish their fermentations

Showcases a very earthy and peppery side of yeast phenolics. Bright gold, deep yeast forward aroma and taste. Fresh turned garden soil, pepper, clove. Little if any perceptible acidity. Lean and crisp, subtle, easy drinking. Nice work on this more or less “clean” saison.

I had this on draft at Revolution's Taproom on 6/19/24.
Cloudy dull yellow appearance.
Nice white head; nice lacing remained.
Black pepper & grapefruit peel notes in the nose.
Medium mouthfeel.
