Poured gently at 45°F from a 500ml bottle (bottled on 26Aug15) into a tulip. Consumed on 24Jul16.
SMELL: Subtle aromas of tobacco, cantaloupe, blackberries, currants, black cherries, green bell pepper, sour green apple, oak, earthy yeast, and salty minerals commingle with hints of peach, pear, and white grape aromas.
TASTE: A combination of mild tobacco, sour green apple, and cantaloupe flavors first caress the palate. Mild flavors of salty minerals and oak immediately continue the taste development as the tobacco flavors grow slightly stronger. A mild, fruity goodness emerges mid-palate with flavors currants, black cherries, and blackberries. The funk and fruit profile is further amplified as mild
flavors of earthy yeast and subtle flavors of peach, pear, and white grape close the taste theatrical as all previous flavors maintain, except the salty minerals, which grow slightly stronger.
NOTE: Tahoe Mountain once again demonstrates their talents of wine barrel aging. The overall taste was a bit mild, which is somewhat understandable given that this bottle was almost a year old. The red wine came through nicely to bring a spicy and dark fruit aspect that complemented the funk and tartness. The bottle states that this was brewed with sage. I did not perceive any, but I am assuming that it fell off with time. I would have loved to try one of these fresh. This was excellent for being such a mild brew.

Pulling the cork releases a slight barnyard funk, a hint of mustiness, fruit leaning to light tropical and citrus, and faint vanilla. Pours hazy gold under a boisterous 2” bone white foam collar that descends to a thin film producing intricate lace. The palate begins lemony crisp delivered in a highly effervescent emulsion that suggests a lemony pear by mid palate and hints of cucumber or perhaps sage on the finish. Light and refreshing.

Pours a murky light orange with a foamy bone head that settles to a partial film on top of the beer. Foamy swaths of lace form around the glass on the drink down. Smell is sour with malt, grain, fruit, white wine, wood, and sage aromas. Taste is much the same with sour grain, fruit, white wine, and sage flavors on the finish. There is a mild amount of acidity on the palate with each sip. This beer has a lower level of carbonation with a slightly crisp mouthfeel. Overall, this is a very good beer with a great balance between the sour, barrel aged, and sage aspects all around.

12oz into a wine glass. Pours a fully hazed golden yellow, minor off white head recedes to a cap, minor lacing, fine bubbly action throughout.
Aroma is strong of funky wine barrel and sage, very musty.
Sage dominates the flavor, again obvious wine barrel, lots of cedar, very
nice cedar - a highpoint, some citrus. Lacks a dry bite that feels missing.
Sage stays for the length of the slow fading aftertaste. More than thin bodied.
Liking depends upon your care for sage, come for the
sage but stay for the cedar.
