Appearance: Nearly clear bright golden colour, head is grainy white with lots of carb bubbles. Head builds up pretty good, with a low to moderate retention and does settle into a decent ring and fine patches of surface bubbles.
Aromatics: Pungently sweetened tequila with smokey and salty funk permeating it all. Not much room for anything else. Absolutely like nothing I have ever smelled before - totally unique! Almost a little disconcerting though when you go to take a sip and get a lung full of tequila vapour. The aromatics are it’s strongest suit, but can easily be it’s most negative characteristic as well (depends on if or how well you can stomach tequila) (because of it’s extremely unique pungency I am ranking it higher than I probably should)
Taste: Compared to the scents, it is remarkably mild. You can not avoid the barrel infused tequila however, and with an ever so gentle brinyness in the water it balances with the lactic bacteria very nicely. After I had the first glass, I poured a second and squeeze-tossed in a hefty lemon wedge. Just what the doctored ordered - the extra lemon added some great sour… But I didn’t stop there, on my third glass - I added fresh lime and few slices of fresh ginger root. I almost wish I had another bottle, I would mind trying this with a few cloves as well.
Feel: A good middleweight, light carbonation continues through to the end, finishes off super cleanly with little aftertaste.
Overall: A fantastically unique offering from Parallel 49. And extremely well receptive to direct additions of spice and/or other flavours. This will marry well with a ton of different food selections but… for me, pairing : I’d hold of on a major meal for this one, just throw in some lemon/lime and fresh ginger!
