Respect your Elder! This noir ale is a blend of elderberry wheat and two saisons, black and golden, aged in a Pinot Noir barrel for 10 months. Three Saison yeast strains (Traditional, Bier de Garde, and Farmhouse), elderberries, Belgian candi syrup, honey, and molasses help create a complex, yet balanced ale. Expect a fruity, dry finish with notes of oak, red wine, raisons, and roasted barley.

Poured from a cork'n'cage bomber into a tulip
As per the brewery description: "Respect your Elder! This noir ale is a blend of elderberry wheat and two saisons, black and golden, aged in a Pinot Noir barrel for 10 months. Expect a fruity, dry finish with notes of oak, red wine, raisins, and roasted barley."
L: Nearly clear dark maroon pour. 1.5 fingers of foamy white head. Falls fast with a thin rim of lacing.
S: Red wine... dark grapes and elderberry. Fruity and oaky.
T/F: Fruity with light tartness... dry... strong red wine presence, especially in the finish. Initial mild sweetness fades quickly. Good fruit character. The pinot noir oak really comes through throughout the sip. Dark and rich.
O: A very nicely done, and one of Otto's better 'cork and cage' releases. The red wine barrel really works for this beer. Would definitely pick this one up again.
