Brewed in 08.2016 by Jared Nelson Smith, SIH is an experiment in esters produced by our house yeast culture. Using exclusively Mecca Grade's LaMonta malt he first brewed a single-malt, high-gravity wort that our yeast began chewing on. A week later he introduced a very low-gravity wort in order to get different yeast-derived components. Aged in first-use wine barrels, dry-hopped with Goschie Farms Cascade hops & bottle-fermented with rich El Cuatro wort contribute to the Wilderness of this fine Apothecary brew.

750 mL bottle. Capped, not corked! Big white head and clear golden body. Smells of grassy hops and wine. Tastes of wine, dried grass, astringent oakiness. Earthy finished. Medium heavy. Well carbonated. Pretty good.

L: A dark shade of gold.
S: Intense rush of spices.
T: A slow rush of spices that feed into a strong, complex mix of honey nodes that fades into a creamy wood ending.
F: Sweet and simple.
O: A very drinkable, honey infused beer. in some ways the opposite of the more subtle 3 fontienen golden blend honey

Bottled 9/4/2017.

L: Pours a clear golden color with massive off-white head with long retention. Lots of bubbles racing to the top visible giving it a Champagne look. Good lacing on the glass.

S: Little hops, some honey. Not a very strong aroma at all which is my only real complaint. Nothing bad about the aroma but nothing exciting me about taking my first sip either.

T: Getting some of the Cascade hops, nice malt sweetness. Little bit of honey.

F: Medium body, high carbonation, but a nice soft feel.

O: I enjoyed this beer quite a bit. Good balance of the malt, yeast, and hop flavors showcasing the depth of sour beer without needing fruit and other flavors. Happy to say this had none of the vinegar flavors that were heavy in many of the 2017 Ale Club beers (this was a 2018 release), and it's quite nice to get a softer feel to an AA beer.
