Wife and I visited and sat inside during the pandemic. A couple friends joined us. I love wild / spontaneous places, and Ale Apothecary was right up my alley. Gorgeously rustic, smelled of grain and fermentation, surrounded by barrels.
They had five beers available to sample, and we tried all of them, and enjoyed all of them. The Sweet Dark Cherry El Cuatro was excellent. Selection could have been bigger, but it covered a decent range in the sour/wild spectrum. They didn't have any options for IPA or AAL enthusiasts, so don't come here if that's what you're looking for (like the people in front of us in line).
We talked with Staci quite a bit while we were there, and she was fantastic. Friendly, knowledgeable, excited, helpful. We went home with 6-8 bottles. Wasn't a cheap visit, but was my favorite stop out of a bunch of breweries in Bend.

Pouring room with barrel room in the back. First. the beers, all wild fermentations, are world class. They have a few bottles open for pours and you can order any other bottle you want. Brewer is ex-Deschutes and the pouring room is typical staffed by his wife and the assistant brewer's wife. Both are super friendly and knowledgeable. Great vibe, very chill. Small bar with only 8 or so seats but a number of big tables. No food. Right next door to GoodLife (who has food).
