this beer is incredible, a total winner, and a total surprise as well. its a brett saison with lychee fruit in it, which is an interesting combination of things to say the least. looking at the fat bottom page, i saw another lychee beer, two beers with this odd fruit from the same brewer, thats uncommon! this is next level, a really sturdy imperial type saison, with lots of wheat and body from it, dry and flavorful on the grain base, cerealy and maybe including some other malted grains too, but the texture of the wheat and its classic rustic flavor is what stands out to me. lychee is a mild flavor to begin with, distinct but mild, and i can only imagine how minimal it is when all its sugar is fermented out, this has a surprising amount of lychee character to its aroma and flavor, hints of raw coconut flesh, hibiscus, and rose petal, delicate but knowable in this beer. a honey note in aroma and flavor too, floral and bright, and also the funk, which is weird in the nose, bretty and slightly tart, and real mature, earthy, and drying in the flavor, lambic elements to this, although not nearly that complex from a yeast standpoing. there is a saison strain in here too contributing a while wine ester and aiding in drying this out, a stronger saison beer. i love the lychee flavor coming through it, in my head a more delicate beer would be needed to showcase it this well, so this defies my logic. wonderful carbonation and still with lots of body at the end. this is awesome beer, springy, funky, refined, inventive, and something i really want to get my lips on again. wow!
