this is a pretty solid american take on an old world style here, still sweet, but i like the belgian yeast strain they use and i like the way they use it. its a little mild in the aroma, just sort of delicate and floral, and has some nice flowery and spice notes in the flavor, a little more sturdy than it smells, but its still not over the top on the esters and stuff like some of the belgian ones can be, perhaps fermented just a little bit cooler, but it makes a lot of difference. i think it keeps the alcohol from being too intense, it definitely mellows out any harshness from the yeast, and makes the residual sugars less offensive to me since its really all thats there at the end, cleaner in that way. the grain base is light, and the beer drinks light, it doesnt show its strength hardly at all, even when it warms up. it can be felt, but not tasted. dangerous. honey notes in here, raw, waxy, and floral, and some fresh grainy wheat as well. mild white pepper and something else a little botanical. its got a real springtime vibe to it, but certainly is substantial enough for the winter weather. i have always enjoyed the belgian styles these guys make, and this is another good one. the yeast is something a little different.
