Ferme de Cassis is a black currant farmhouse ale that we ferment in our oak foeder with our house culture of wild and traditional yeast. This beer starts off with a base of floor malted pilsner barley and malted spelt, and is enhanced with a small amount of special Belgian barley. A handful of hops are added for a touch of bitterness for balance. Our house culture leaves the beer with a farmhouse character and a dry finish, while the fermented black currant provides an earthy, tart flavor and rich color that is sure to catch the eye, as well as the taste buds.

i have really liked the wild beers these guys make for the most part, not at all a generic brett or bacterial profile to their stuff, and uniqueness in these is a huge turn on for me in this day and age when so many are trending the same. this one is fermented in oak with black currants, and they did a great job with the beer. i think even before the fruit its a great saison, with plenty of wood on it and a cool multigrain rustic malt base, cerealy, earthy, and dry, much more character there than a lot of these have, but it still drinks light. the funk is high and the tartness moderate, seemingly as much coming from the tangy currants as from the bacterial elements in play here. i love the maturity, even though its off dry, the yeast flavors are really well developed. a touch of vinegar and iodine to it too. the fruit is natural and bold, balanced well by the grain though too, this isnt all juice. red winey, purple grapey, blackberry jam, really deep and awesome in here, all smoothed over by the wood in the finish. carbonation might be just a little lower than what i want from this style, but overall this is an awesome and drinkable wild beer with a great natural black currant flavor. i wish these beers made their way out west a little bit...
