a light and easy drinking honey saison, not as interesting on the fermentation side as i generally prefer in the style, but i like the beer overall, a little more advanced than most others i have had from these guys so far. its real pale, almost pilsener shade, but not quite clear, and there is a lively white head here and lots of bubbles rising up to join it. the aroma is estery from the yeast with just a little floral character from the honey. i get pear and white wine, maybe a french saison yeast at work here. light orange and honeysuckle, very dry crackery wheat base, simple but clean. the flavor is equally yeast driven, and it seems a lot of the honey has been fermented out of this, but some of its flowery essence remains, which balances the cereal grain nicely and plays well with the yeast, which has green apple, white pepper, and chamomile and is there from start to finish. the beer is good and dry, and the the simplicity is appealing overall. good carbonation, lighter bodied, and without a ton of taste or feel contribution from the pale wheat. summery and clean, a little unexciting, but i enjoyed this one after a lot of car time, exactly the refreshment i needed!
