Wild sour aged for 15 months on American oak. After its extended rest on wood, it was then conditioned on 170 lbs of apricots to balance the aggressive funk and acidity the wild yeast and bacteria displayed.

Appearance: Arrives with the opaque liquid being the color of dried apricots; no head of lacing apparent
Smell: Apricot and oak; both sweet and tart elements of the fruit
Taste: The sweeter side of a dried apricot arrives, at first, with a turn quickly made toward the sour; the middle brings a slight funk but the predominate flavors are oaky and dry; nice fruit flavor in the aftertaste
Mouthfeel: Medium body with low carbonation; puckery
Overall: Among the fruits used to make fruited sours, apricot is clearly my favorite and Heist has done a nice job here
