Double barrel imperial stout from our first batch back in January 2022. Aged in a freshly dumped Heaven Hill Bourbon barrel for 11 months then transferred to a toasted French cognac barrel for finishing over another 9 months .

Appearance: Pours pitch black with a tan film that fades quickly; leggy but no lacing
Smell: The Cognac barrel brings its uniqueness to the aromatics, alongside the more familiar Bourbon tone; chocolate, caramel and a hint of vanilla; quite oaky
Taste: The twin barrels stand out, from the outset, first the complexity of the Cognac and then the sweeter Bourbon, with the Cognac a bit more pronounced; underneath, the chocolate and caramel add sweetness; boozy finish, with just a hint of vanilla
Mouthfeel: Full bodied and creamy with no carbonation; warmth in the gullet
Overall: I am inspired by what the Cognac barrel brings here and that makes this quite different from your usual top flight Bourbon barrel aged stout, I don't like it as much as some of the other Heist BA stouts; still, this is quite good

500 ml bottle into a snifter. A 2023 release, had 11/23/23.
Pours near black and opaque, with a brief head and some sparse foamy lacing. Aromas of bourbon, cognac, vanilla, malt, chocolate, light oak and tobacco. Flavors of cognac, bourbon, vanilla, malt, chocolate, some oak and caramel. Smooth, a very good full body, well carbonated.
The bourbon and cognac barrels dominate, but there’s a strong enough malty backbone to support them. This isn’t one to savor all the distinct aromas and flavors you notice, there’s not much past the barrels. But it’s still really good and enjoyable.
