It didn't take a beautiful mind to figure out that our Cranberry and Spruce Tip Saison was a perfect match for the botanical qualities of a good gin. So when we got our hands on a couple of barrels used to age some small batch American spirit, we immediately put some of our holiday favorite down to dream for a year. The result is wonderful enough to make the world stand still. The landscape of barrel aged beers can be a labyrinth of complex and heavy flavors that can overwhelm and drag you down. So look to Conifer Ginelly, with her clean, bright, and refreshing barrel aged character to rocket you out of your barrel aged doldrums with an award-winning performance!

Poured from 22-ounce bottle into a stemmed goblet. Color-wise, this appears to be somewhere on the fuchsia spectrum, hazy, with a decent white head that settled to a thick ring. I've always said I love it when a brewer delivers on his promises, and this one does in spades: saison, brewed with cranberries and spruce tips (listed on the bottle as an adjunct) and aged for 13 months in gin barrels. All of these flavors are in-your-face, particularly the spruce tips which lend a beautiful bouquet up front. Notes of tart cranberry also obtain, complimented wonderfully by the herbals and botanicals of the gin barrels. I tried pairing this with some aged Wisconsin cow's-milk cheese, but the cheese was slightly overmatched by the bold flavor profile of the beer. Still, a pleasant enough diversion, and a great holiday beer to share with friends.
