this is prairies answer to some of the classic belgian lambics of the world, no fruit or anything, its really interesting, but to me tasted a little bit young, like it needs some time to develop moving forward. its much more delicate than some of the european ones, less acidity for sure, less oak tannins, just softer and milder in general, but no less flavorful. its wheat based, apparently wild fermented, hazy and creamy looking, very much alive, especially compared to the flat unblended lambics of belgium. i like that. its aroma is woody, wheaty, and more bretty than lactic, but its a new expression of wild yeast for me, soft with some white grape notes, apricot, even kumquat or something with a little acidity. the flavor is similar, soft on the yeast, it doesnt punch you in the mouth, but its very interesting if you just let it come on slowly. i think some will critique it for not being complex enough, but i think its more an issue of immaturity than being one dimensional. i bet this will be epic in a year or two. even now though its a great wild ale, just presenting itself more as a saison than as a lambic type, but i like the wild side, even if it is a little understated for now. cool beer, neat they are doing some of these more traditional styles now. cant wait to see these proliferate a little bit. part of that american solera project they are launching from what i understand...
