Imperial Stout Aged in Bourbon Barrels with Samoa Cookies, Vanilla, and Coconut. One-off from Prairie Dawg Barrel Program.

On the pour, there's less viscosity than I expected. That said, you get nice chunks of coconut that settle above the beer, along with almost zero carbonation.
The nose gives off an excellent combination of heavy barrel and slightly bitter coconut balanced with rich notes of vanilla and silky dark chocolate. Deeper, sweeter aromas of homemade caramel come out as the beer continues to warm.
The palate definitely needed time to open up before accurately describing all the qualities it had to offer. Again, lots of barrel heat immediately hit. Quick to follow are notes of burnt caramel, bitter vanilla, toasted oak, and baker's chocolate. It's not overly pastry and I enjoyed that about this; it's still clearly a bourbon barrel stout, with nuances and clear influence from a Girl Scout classic.
The viscosity left a little bit to be desired, but there's a smoothness that really shines as the beer hits about 55-60°. As it finishes, you're greeted with a touch of stinging bitterness from the toasted coconut as well as a great boozy warmth all the way down.
