We replaced 100% of our brewing water with Maple sap straight from locally tapped Maple trees, which lends an underlying wood-like character similar to the effect of oak barrel aging. Caramel and Munich malts play a supporting role to the familiar flavor of Maple syrup. Being a simple sugar, maple is easily fermented down to a dry, refreshing finish!

22 ounce bottle into tulip glass; no bottle dating, but is a recent release. Pours slight hazy reddish copper color with a 2 finger fairly dense and fluffy light khaki head with good retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings around the glass, with a good amount of streaming carbonation retaining the cap. Aromas of big caramel, brown sugar, maple, molasses, toffee, wood, brown bread, toasted biscuit, nuttiness, herbal, light pepper, light plum/apple, and yeast/toasted earthiness. Damn nice aromas with great balance and complexity of dark/bready malt, maple sap, and light earthy hop/fruity yeast notes; with great strength. Taste of big caramel, brown sugar, maple, molasses, toffee, wood, brown bread, toasted biscuit, nuttiness, herbal, light pepper, light plum/apple, and yeast/toasted earthiness. Light herbal/spicy bitterness on the finish; with lingering notes of caramel, brown sugar, maple, molasses, toffee, wood, brown bread, toasted biscuit, nuttiness, herbal, light pepper, light plum/apple, and yeast/toasted earthiness on the finish for a good bit. Damn nice complexity, robustness, and balance of dark/bready malt, maple sap, and light earthy hop/fruity yeast flavors; with a great malt/bitterness balance and zero cloying flavors after the finish. Light-moderate dryness from carbonation as well. Medium-high carbonation and medium-plus body; with a very smooth, creamy/grainy/bready, and lightly crisp/sticky balanced mouthfeel that is great. Alcohol is very well hidden with minimal warming present after the finish. Overall this is a great amber ale! All around great complexity, robustness, and balance of dark/bready malt, maple sap, and light earthy hop/fruity yeast flavors; very smooth and easy to drink. Was not expecting English yeast, but it worked really well with the other flavors. A very enjoyable offering.
