i was wildly disappointed with this one, pun intended. more so now that i know it was a collaboration with saint mars of the desert, but also too because while the process sounds cool, the beer is pretty rough, i cant even finish a pour, perhaps its trying to be too many things, a belgian strong ale, a saison, a strong modern ipa, its all a bit muddled, but the one thing i want and expect it to be, a fermentation forward wild beer from coolship inoculation, it is not, or at least does not appear to be. lighter amber brassy colored from the tap at the wild beer spot in bristol, decent head, but the aroma immediately turns me off, it smells old and oxidized for one, sweet and malty for two, and messy and almost spoiled, wet paper, compost, and expiring hops, its just not right. i get some wine notes from it, some bitter citrus from the hops as they now stand, and perhaps some flattering belgian yeast phenols, but this is really rough. its musty in a bad way, weirdly alcoholic, high alpha, and sort of rotting to me, a little chemical, and just off. not sure if its been around awhile, poured through a dirty line, which would inexcusable here, or if its just a miss of a beer. there doesnt seem to be much intrigue to the ferment, and if this is what their wild ambient capture looks like, maybe time to scrap that as part of what they do, i can hardly stomach this, and my crew agrees. fuller bodied and finely carbonated but the texture doesnt save it. wanted way more from this, not even knowing what it was supposed to be, but the name implies something i love, and this really misses. hands down the worst beer we had here, but the whole experience was underwhelming from a beer standpoint...
