Bottle-conditioned in a 750ml brown bottle, BB 26/09/2015 or 10/09/2015 (both are printed on the bottle!), served lightly chilled in Hapkin’s short-stemmed tulip-shaped sniffer.
A: dark reddish amber in colour coming with a creamy off-white frothy head with good retention, on top of healthy flows of microscopic fizz.
S: wonderful aroma… the semi-vanilla like sweet malts aroma and lightly oxidised fruit (fat white grapes, green pears, ripe gooseberries, etc.) esters marry the rich Saaz(?) aroma beautifully, creamy on the nose backed by a decent limey acidity and very pale malts. Brett? Not so noticeable in terms of the funky impact on the nose. The overall impression is more like that of a Saison actually.
T: medium-bodied and softly carbonated on the entry with sour-ish fruity elements prevailing with an almost green tea-ish undertone, against a rather loose malt (spelt, I presume) background; going dry-ish towards the finish, but always lubricating on the palate, ensued by lightly spicy undertones and nicely chewy palate in the end.
M&O: softly carbonated, the bottle-conditioning is done very well, against a medium-minus body of a rather subdued flavour profile as compared to the impression of the aroma. All in all, this is an easy-drinking session type of saison, with a slightly less pronounced flavour than desirable.

A rustic farmhouse ale that blends rural brewing traditions ancient grains and contemporary brewing ideals. Spellbound is a 100% Brettanomyces fermented golden beer brewed with locally grown spelt and citrusy European hops. Look out for tartness from the malt used, a full body for it's strenth from the spelt flakes, spicy citrusy notes from the hops and both tropical and funky aspects from the brettanomyces yeast strain.
