Oui, Chef is a straw-colored farmhouse ale brewed with European spelt and two types of fennel. We use both fennel seed and fennel pollen at different points in the brewing process to layer in the complex savory and herbal notes from the spice. Originally brewed as part of our Chef Collaboration series in 2012, this beer was designed by our brewers and Chef Gabriel Rucker of Le Pigeon Restaurant in Portland.

This is the third release in our new Farmhouse, Fruit and Funk Series. This set of six beers–each available for two months of the year–showcases the deft and playful ways in which our brewers use non-traditional ingredients to make complex, flavorful beers. From lychee and yellow chilies to Oregon-grown peaches and California kumquats, this line of beers stakes a claim for the “culinary beer” as an emergent, delicious and elegant new beer style.

Had on tap. Clear pale golden body with a thin white collar. Smell and taste are laced with fennel, to the point of overwhelming the palate completely. Spelt, grains, lemon, and yeast try to make a dent but are swallowed up in the tsunami of fennel, too out of balance for me. Feel is bright, medium bodied, dull on the edge and earthy. Drain pour

Pours a hazy honey orange with a foamy khaki head that settles to a partial film on top of the beer. Foamy rings of lace line the glass on the drink down. Smell is of grain, floral, herb, spice, and citrus fruit aromas. Taste is much the same with slightly tart herb, floral, citrus fruit, earth, and spice flavors on the finish. There is a mild amount of bitterness on the palate with each sip. This beer has a lower level of carbonation with a slightly crisp mouthfeel. Overall, this is a very good beer with nice herb and floral characteristics from the fennel that make this one interesting.

Beautiful golden pour with abundant creamy head and nice lacing. Honey aroma, spice, floral notes, hay fields. Smells like French sunshine. Taste drives it home, substantial rustic malt notes, a honey and fennel note, impressions of sweetness but finishes dry, medium body. Wonderful.

Delicious, and unlike any saison I've ever tried. Great funkiness, with some spicy notes. Complex flavours, balanced out by moderate sweetness. Excellent beer!

If funky farmhouse ales are your thing, then try this. Pours a golden orange with a thick, rocky, off-white head. Good and hazy. Strong spicy aromas. Definitely fennel, coriander, grass. Subtle mint aroma. Taste is grain, fennel. Spelt keeps it smooth and full. Fennel really allows for funkyness to come out.
